Lamb Flank

The lean lamb flank is found nearer the hindquarters on the animal’s underside. It is a healthy option because it has little fat and frequently contains a few rib bones. However, because the lamb flank has little fat, overcooking can make it dry. It is, therefore, best suited for slow-cooking techniques that release the connective tissues, producing delicious and delicate lamb.
