Lamb Rib

A highly valued portion from the animal’s side is lamb rib meat. Ribs six through twelve are tucked in on either side of the backbone and between the loin and shoulder. Because it is more desirable and available in smaller quantities per animal, lamb rib meat—prized for its delicacy and exquisite flavor—often costs more than other cuts.
