Beef omasum
The omasum, one of four chambers of a cow’s stomach (the rumen, reticulum, and abomasum), is essential for digestion. Fresh, high-quality omasum appears in bright or dark gray and contains somewhat more fatty tissue, making it elastic and firm to the touch. Its distinctive feature is the presence of distinct folds on its inner walls, known as “tabs.” Surprisingly, omasum is regarded as a supplementary food source, comprising a comprehensive profile of vital vitamins, minerals, trace elements, and good microorganisms.
