Beef tongue

During this procedure, the tongue, root, and the backmost section connected to the neck are trimmed to eliminate extra fat. The trachea (windpipe) is also divided. Most of the salivary glands, which are crucial for hydration and digestion, are removed. However, the hyoid bone, which supports the tongue muscles and the tiny sublingual glands found beneath the front of the tongue, remains intact.
